Meringue Mess Ingredients: 3 Meringue Nests Whipped/ Squirty Cream A punnet of fresh Strawberries/ Canned Instructions: Leaving 1 meringue whole, crumble up the remaining two. Place the intact meringue in a bowl and put a layer of cream on top. Add several strawberries, which should be cut in half, and add a little of the crumbled meringue then a few more strawberries followed by the same again. Top with a swirl of cream and mix to eat. Brownies Ingredients: 125g Plain Flour 125g Margarine 50g Cocoa Powder 225g Soft Brown Sugar 1/2 a teaspoon of Baking Powder 1 teaspoon of Vanilla Essence 2 large Eggs Instructions: Line a tin with greaseproof paper covered in butter to prevent it sticking. In a mixing bowl sift together the flour, cocoa powder, baking powder and a pinch of salt. Cream the margarine with the sugar and vanilla essence until it has a light consistency. Beat in one egg at a time, including one spoonful of the flour mixture with each as you do so. Use a metal spoon to gently fold in the rest of the flour mixture and spread it evenly into your tin. Cook at 180˚C for 25 to 30 minutes and leave to cool. When lukewarm cut the brownies into squares and turn onto a wire rack. Baked Apples Ingredients: 1 medium sized apple (Bramley or similar) Cinnamon Raisins Butter Soft Dark Brown Sugar Instructions: Preheat the oven to 200˚C. Core the apple by cutting a square around the core and pulling it out. Cut around the outside of the apple so the skin is cut put not any of the fruit: this is very important to prevent the apple exploding. Put the apple on a greased baking tray and stuff the holes with a mix of sugar, cinnamon and the raisins. Put a square of butter on the top and make sure the base of the tray is covered with water, this should be topped up when cooking if needed. Cook for 45 minutes until the fruit is fairly soft. Spoon the water over the top when ready to eat to bring in more flavour. Honeycomb Ingredients: 6 tablespoons of clear Honey 150ml of Water 25g Margarine 1 teaspoon of Vinegar 275g Granulated Sugar 1 teaspoon of Bicarbonate of Soda Instructions: Put everything except the bicarbonate of soda into a big pan and put it over a low heat whilst the sugar melts, stirring it regularly. Bring it to the boil and cover for 2 minutes whilst it continues to boil. Uncover the mixture again for 10-15 minutes without stirring. Test when it is done by dropping a small amount in some cold water- hard threads should be formed when this happens. When it is ready move the pan off the heat and stir in the bicarbonate of soda. The mixture will rise and should then be poured into a greased tin and left to set. Once it is hard break the honeycomb up. This is nice crumbled over ice cream, dipped in chocolate or alone as a treat. Apple Crumble Ingredients: 1 tin of Pie Filling (apple or other) 75g Butter or Margarine 175g Flour 75g Caster Sugar Instructions: Preheat the oven to 200˚C. Sift the flour into a mixing bowl and rub in the butter in small pieces until it forms a breadcrumb like mixture. Mix in the sugar at this point. Open the tin of filling and pour it into an oven proof dish, then place the crumble mixture on top and spread evenly. Cook for 30 minutes. Chocolate Mousse Ingredients: 100g Dark Chocolate 2 separated Eggs 2 tablespoons of cold Black Coffee 1 tablespoon of Caster Sugar Instructions: Put the chocolate and coffee in a bowl over some simmering water ensuring that the bowl does not touch it. When the chocolate has melted put the bowl to one side and beat the egg yolks with a tablespoon of cold water, you should then stir this into the melted chocolate. Whisk the egg whites in a separate bowl until it becomes stiff, then add the sugar and beat it until stiff again. Mix this with the chocolate and put the mixture in a dish to chill for 2 hours prior to eating. |
