Roasted Lamb Chops
Ingredients: 2 Lamb Chops Dried Rosemary 1 teaspoon of Olive Oil 1 chopped Leek 2 Garlic Cloves 4 Cherry Tomatoes 1 deseeded Red Pepper 1 Deseeded Yellow Pepper Instructions: Preheat the Oven to 200˚C and put the olive oil in a roasting pan. Lightly bruise the garlic and place in the pan. Chop the pepper and add to the pan along with the leek and a sprinkling of rosemary all over. Place the chops on top of this. Cook for 20 minutes, turn the chops and stir the vegetables, adding the cherry tomatoes. Cook for 20 minutes until the chops are a light brown and serve.
